Green sprouted surprise

Hot, sweaty, and holding the leash of a wild dog, I was desperate for refreshment. Imagining lemonade, a homemade ice pop or an iced coffee, I couldn’t walk fast enough to the farmers market in Logan Square, Chicago. The white tents were inviting, offering shade and snacks as I walked around searching for the perfect summer treat.To my surprise, what I found was something refreshing, light, delicate and packed with flavor. It was cut with scissors and handed to me in a perfect bite.

I had stumbled across Tiny Greens, a farm stand owned by Bill Bagby who specializes in growing sprouts of all kinds. I tried a selection of black onion, cabbage, and kohlrabi sprouts. Only two weeks old, these small bites were the perfect snack. I came home with a few bags, and I have been tossing them in salads, coleslaws and sandwiches ever since.
